Japanese Eggplants produce big crops of mild flavored, narrow fruit. The attractive fruits and flowers make a nice addition for the vegetable garden. Use like regular eggplant for grilling with a little olive oil or in stirfry. Eggplants are easiest to start indoors unless you have a long growing season. Sow indoors about eight weeks before transplanting. Keep in a warm location while germinating as eggplants will not sprout in cool soil. Transplant after weather has completely warmed.
